Vegan BALT Sandwich (Bacon, Avocado, Lettuce, Tomato)

This is one of my new favorite ways to cook tempeh! I seriously thought cooking it in BBQ sauce was so weird at first, but it turned out absolutely amaaaazing. Trust Nimai and make this Vegan BALT Sandwich ASAP!
Ingredients:
A few slices of tempeh
2 tbsp vegan BBQ sauce
2 slices of toast
1-2 tbsp vegan mayo
1 slice vegan cheese (I used Follow Your Heart pepper jack)
Lettuce or spinach
1 slice tomato
1/4 avocado
Directions:
Heat a frying pan on medium and add the thinly sliced tempeh.
Cook for 2-3 minutes to brown.
Add the vegan BBQ sauce an cook for another 2-3 minutes.
Meanwhile, toast your bread and prep your veggies.
When the tempeh is done, assemble your sandwich:
Spread the mayo on the toast, then add the cheese, tempeh “bacon”, lettuce, tomato, avocado, and greens.
Enjoy!
Tips and Tricks:
Your tempeh may break apart in the pan if you slice them too thin. This is totally okay, just be careful when flipping/cooking them.
