Bring rich, savory flavor to your holiday table with this Vegan “Turkey-Style” Gravy (Thin & Smooth). Made with sautéed onion and garlic, vegan chicken broth, and bay leaves, this gravy is silky and flavorful. This is the absolutely perfect topping for drizzling over mashed potatoes, stuffing, or vegan roasts. Quick and easy to prepare, it can be made in under 20 minutes and days ahead of time, making it a stress-free addition to your Thanksgiving, Christmas, or holiday feast.
Ingredients:
4 tbsp olive oil or vegan butter
1 medium onion
3 cloves garlic
4 cups vegan chicken broth
2 bay leaves
1½ tsp dark soy sauce or tamari
Salt and pepper to taste
2 tbsp cornstarch, mixed with 2 tbsp water
Directions:
Start by cooking the onions and garlic.
Roughly chop the onion, and smash the clove of garlic.
Add them to a sauce pot and heat over medium heat.
Cook for about 3–5 minutes until soft and fragrant.
Add in 4 cups vegan chicken broth, bay leaves, soy sauce, salt, and pepper.
Bring to a simmer and cook for 8–10 minutes, stirring occasionally.
Strain the gravy into a second sauce pot using a fine mesh sieve.
Use the leftover cooked onions and garlic in another recipe like a soup, pasta dish, stir fry, or simply add them into your mashed potatoes, stuffing, or on top of some vegan turkey.
Whisk the cornstarch slurry into the gravy, then bring to a gentle boil.
Boil for about 5 minutes, stirring occasionally, to thicken.
If it's still not thick enough, add another 1 tsp of slurry (1 tsp cornstarch mixed with 1 tsp water). You can keep adding more slurry, 1 tsp at a time, until you reach the desired thickness.
Then, remove from heat and let it sit for another 5-10 minutes to thicken (it'll continue to thicken as it cools).
Taste and add more salt, pepper, and soy sauce if desired.
Serve over mashed potatoes, stuffing, or a vegan roast.

Tips and Tricks:
This is easily customizable! Try adding rosemary, thyme, oregano, or sage to the sauce.
The gravy will become clumpy as it cools down, or stored in the fridge, which is normal. Reheating in the pot or in the microwave will make it thin again.
Make ahead of time and store in an air-tight container in the fridge for up to 7 days. Reheat in a pot on the stove, adding more vegan chicken broth to thin if needed.
You can add more veggies in the beginning for an even more flavorful gravy. Try adding diced mushrooms, celery, or carrots along with the onion and garlic.
