These Tofu Scramble Pancake Breakfast Sandwiches (McGriddle Inspired) are the ultimate sweet-and-savory vegan breakfast mashup. Fluffy pancakes take the place of buns, sandwiching a hearty tofu scramble, melty vegan cheddar cheese, and crispy plant-based sausage. Every bite hits that perfect balance of maple sweetness and salty breakfast comfort. No drive-thru needed! Whether you’re meal prepping for the week or treating yourself to a cozy weekend brunch, this vegan McGriddle-style sandwich is pure comfort food magic.
I personally preferred tofu scramble with this as I felt the seasonings blended throughout the tofu and created a more flavorful "egg" substitute, rather than a slice of tofu. You're welcome to use a slice of tofu (or a prepared Just-Egg patty) for a less messy experience.
Ingredients (Pancakes):

1 cup all-purpose flour
1 tbsp sugar (or 2 tbsp maple syrup - recommended for this recipe)
2 tsp baking powder
¼ tsp salt
1 cup dairy-free milk
1 tsp white vinegar
1 tbsp neutral oil (or melted vegan butter)
1 vegan egg substitute
Alternatives: 1 tbsp flax seed, or 1 tbsp unsweetened applesauce
½ tsp vanilla extract
Ingredients (Tofu Scramble, simplified):
1 tbsp vegan butter (or veg oil)
1 block firm tofu (14oz)
1 tbsp garlic powder
1 tsp turmeric
1 tsp black pepper
1 tsp black salt (kala namak)
Ingredients (Sandwich):
Vegan cheddar cheese (either sliced or shredded)
Vegan breakfast sausage patties
Maple syrup for dipping
Directions:
Start by making the pancakes. You can find the full pancake instructions here.
Set the pancakes aside to cool as you cook the tofu and sausage.
Next, prepare the tofu scramble.
Drain the tofu, and add it to a bowl (no need to press the tofu). Break it apart using the back of a fork until it's in small chunks.
Add all spices (garlic powder, turmeric, black pepper, black salt) to the tofu, and gently mix to combine until it's evenly coated. You can let it sit for 10 minutes to marinate if you'd like.
Cook the tofu mixture: Add the tofu mixture to frying pan. Cook until warm, stirring occasionally, until everything darkens in color (about 5 min).
Cook the vegan sausage according to the instructions on the package, usually heating in a frying pan until crispy on the outside.
Now it's time to assemble the sandwiches.
Melt some vegan cheese on one pancake (I did this in the microwave, but you can also add the pancake back into the frying pan, top it with cheese, and cover with a lid until melted).
Add a scoop of tofu scramble, 1 sausage patty, drizzle with maple syrup (optional), then add another pancake on top.

Tips and Tricks:
This is a super easy recipe to make if you already have one of the elements already cooked. If you already have leftover tofu scramble or pancakes, this is a great breakfast to make with those leftovers.
As mentioned above, you can use a Just-Egg patty, or a slice of tofu instead. For the slice of tofu version, be sure to press the firm tofu first. Then slice into 1/4" thick slabs, and sprinkle all the seasonings on both sides of the tofu (use your fingers to massage the spices into the tofu). Let it sit for 10 minutes to marinate before cooking in a frying pan with a little vegan butter. Cook until both sides are slightly golden brown.
Store all the leftover sandwich components separately in air-tight containers in the fridge for up to 5 days.
