Microwaved Sweet Potato Chips

Yield: 2 servings | Prep time: 10 minutes | Cook time: 10 minutes | Total time: 20 minutes

Yes, I know what you're thinking. Microwaved sweet potato chips?! This must be fake... But it's not!! These turn out super crispy, fresh, and have only 4 ingredients. I love making these chips whenever I have a random sweet potato that I don’t know what to do with.


Ingredients:

  • 1 medium sweet potato (try to use a thin one)

  • 1 tsp extra virgin olive oil

  • Salt & pepper (to taste)

Directions:

  • Slice the sweet potato by using a mandolin on the thinnest setting.

    • If you do not have a mandolin, slice them using a knife as thinly as possible. It’s okay if not every piece is the same size.

  • In a bowl, coat the slices of sweet potato in olive oil. Add salt and pepper to your liking.

  • Cut a piece of parchment paper to fit on a microwave-safe plate.

  • Place the sweet potato chips on the paper. Make sure the pieces are not touching.

  • Microwave for 3-4 minutes until brown.

    • After the first 2 minutes, check after every 30 seconds to make sure they don’t burn.

  • Take the chips off the parchment paper and lay on a drying rack for 5 minutes.

  • Enjoy immediately!

Tips and Tricks:

  • These do not store well. They will get soft as time passes so unless you want soggy sweet potato slices, enjoy them immediately.

  • Try adding garlic powder, onion powder, or a sprinkle of cinnamon before cooking!
