Sink your teeth into these Beyond Meat Panini Patty Melts—a bold, plant-based twist on the classic diner favorite. Featuring juicy Beyond Burger patties (you can use either the Classic Cookouts or their Stack Burgers), caramelized onions, melty dairy-free cheese, and crispy toasted bread pressed to golden perfection, these vegan panini melts are the ultimate comfort food. Perfect for lunch, dinner, or game day, this recipe delivers all the savory, cheesy, meaty goodness you crave—without the meat or dairy. Quick to make and packed with flavor, these vegan patty melts are a must-try for anyone craving a satisfying, indulgent, and totally plant-based sandwich experience.
Main Ingredients:
Beyond Meat burgers (2 Classic Cookouts or 4 Stack Burgers)
8 slices of sandwich bread
Vegan butter
Yellow onion, diced
Lettuce, chopped
Tomato, thinly sliced
Vegan cheddar, slices
Your favorite burger sauce (mustard, ketchup, mayo, bbq, chipotle, etc)
Directions:
First, cook the burger patties. Heat a frying pan on medium, add the frozen Beyond Meat burgers to the frying pan, and cover.
Cook for 4-5 minutes to defrost them. Flip, and cook for another 2-3 minutes.
If using the thicker Class Cookouts, remove them from the pan, carefully slice them in half horizontally to make 4 thin patties. Put back in frying pan (cut side down) & cook another 2-3 minutes until browned.
If using the thinner Stack Burgers, you can cook them as normal until they're browned on both sides.
Remove burgers from pan & set aside.
Next, cook the onions. Add the diced onion & 1 tbsp butter to the same frying pan. Cook until onions are soft.
Tip: add a splash of water (2-3 tbsp) if they start to stick or get too brown or black.
Once the burgers and onions are cooked, it's time to assemble the sandwiches.
Spread a little vegan butter on the outsides of the slices of sandwich bread, then place them butter-side down on a cutting board. Layer the insides with sauce, cheese, burger, lettuce, tomato, onions. Place the other slice of bread on top, butter-side-up.
Cook the paninis: One at a time (or as many as your press/griddle allows), place a sandwich on a warm panini press or griddle, then cook until browned, pressing down slightly to flatten them. Use a spatula to remove it, and let it sit for 1 minute to cool before slicing in half.
Serve with your favorite side, like french fries, tater tots, chips, or salad!

Tips and Tricks:
This is easily customizable! Try some of your favorite burger toppings, like sauteed mushrooms, vegan swiss cheese, pickles, or any of your other favorites.
Store the leftovers in an air-tight container for up to 2 days in the fridge. Reheat in a 350° F oven for 5-7 minutes or until warmed through. You can also reheat in your panini press, but be careful not to overtoast the bread.
